Estate-grown; made at Coldstream Hills and at Hoddles Creek Estate where it was blended and bottled after 18 months maturation in French oak; the colour is deep and clear, the palate with considerable presence and complexity, its savoury assemblage of red and black cherry fruits and supporting tannins providing a mouth-watering finish and aftertaste. Will be very long-lived. Rating 95. Drink to 2038.

Plenty to like about the Toolangi modus operandi. Grow quality fruit and get the great winemakers of the region to craft it for you. This Shiraz made at Hoddles Creek and Coldstream Hills. Aged in French oak barriques for 18 months. Furtive nose: Opens to baked ham, shotgun smoke, cloves, white pepper, cherries and warmed plum halves. In honour of the recent Rio Olympics, this has a lovely entry into the water, not much of a splash at all. Slides in neatly with red fruits all correct and accounted for; elegance for the shroud, rather than a bombastic fruit explosion. Soft strawberry flavours linger with the fine tannins that spread out from the linear mid-line. Deserves a delicately cooked eye fillet.

It would be a mistake to confine southern Victoria’s Yarra Valley to a box containing just chardonnay and pinot noir. It can do other varieties well too, especially shiraz. This isn’t a huge red, like many Barossa wines made from the variety, but it’s certainly robust enough to make the full-bodied category and shows some delightful berry and spice flavours overlaid with some lovely French oak. As the weather continues to cool, I’d suggest matching it with a hearty osso bucco.
This shiraz is made from low cropped hand harvested Yarra Valley fruit.
Aged in French oak barriques for 18 months.
