Tasting Notes: Vibrant nose of jasmine, barley, struck flint and river pebbles. The oak is subtle but gives a gentle seasoning in a white nuts sense to the grapefruit and white peach fruits. The palate is juicy and fills the mouth with white peach, nectarine and a little cream. The texture here is by way of a chalky phenolic which supports the crystalline acidity and flows with maximum refreshment.

Vinification & Elevage: Fruit is whole bunch pressed with juice solids to a mix of French oak barriques and puncheons (35% new) for fermentation. Wine is sulphured without malolactic conversion and lees were stirred for the first 6 months of maturation. 10 months on lees in French oak.
Viticultural Notes: Established in 1995, Toolangi Vineyards is in the Yarra Valley adjoining the Toolangi State Forest. This single site produces wines with distinctive personalities, each wine showing a strong sense of place. This wine is made from low cropped Gin Gin Chardonnay clone from the 18 year old vines on F Block and represents the very best Chardonnay that this vineyard produces.
Optimal conditions for both flowering and fruit set in the vineyards gave well balanced yields with plenty of promise leading into the 2019 harvest. A dry January and February followed, culminating in a relatively compressed vintage, though attention to detail by in the vineyard gave winemakers wonderfully balanced fruit with concentration of flavour and exceptional natural acidity.
