"Hand-picked fruit, whole-bunch pressed to used French oak puncheons and barriques for wild yeast fermentation (no mlf) and 8 months on lees. Paring back on the winemaking influences (no new oak) has left a brightness to this otherwise forceful wine. Fruit in the riper spectrum, more white peach than citrus. The palate is lovely, with the acidity just so."

Tasting Notes: Opens with a puff of flinty reduction. This moves quickly to pastry notes and lemon balm. The mineral character is typical of the Pauls Lane section of the Toolangi vineyard. The palate is both generous and fresh, with white peach and stone fruits, gentle grip and a delicious gulp of Chardonnay flavour that finishes with chalky phenolics and grapefruit freshness.
Winemaking Notes: Hand-picked on the 17th of March
Vinification & Elevage: Fruit was whole bunch pressed to second and third fill French oak puncheons and barriques for primary fermentation by wild yeast. Sulphured on lees without malolactic conversion. 8 months on lees without malolactic conversion.
Viticultural Notes: This single site vineyard on fine clay loam soil and produces grapes wines with distinctive personalities, each wine showing a strong sense of place.
This Chardonnay is made from low cropped, hand harvested I1OV3 (80%) and Gin Gin (20%) Chardonnay clone grapes from the 25-year-old vines on D Block.
2020 was a long and cool growing season in the Yarra Valley. Winter rains were substantial and by the end of spring we had full and healthy vine canopies. The conditions around flowering were challenging leading to low fruit yields. The season progressed with very mild conditions extending the ripening period for harvest well into Autumn for some varieties. The 2020 wines reflect our part of the world and our cool climate.
